Pickled pears

    These pickled pears are a delightful addition to a cold lunch and go particularly well with fruity pork pies or hams. If you want a good cheese to pair, you could try a tasty blue cheese such as a Shropshire Blue, Isle of Wight Blue or of course a trusty Stilton.

    Makes: 6 jars pickled pears

    • 600ml white vinegar
    • 1 tablespoon pickling spices
    • 900g caster sugar
    • 1.8kg pears - peeled, quartered and cored

    1. In a saucepan over a medium heat, combine the vinegar, pickling spices and sugar. Stir while bringing to the boil. Add the pears then cover and lower the heat to simmer for about 1 hour until the pears are soft but still holding their shape.
    2. Lift out the pears with a slotted spoon and pack into sterilised jars. Reduce the syrup in the pan by cooking uncovered over a high heat until it is thick. Strain and pour into the jars with the pears.


    Best if eaten after several weeks of pickling.
