About this recipe: A kid friendly fast recipe that is perfect for summer afternoon treats. Add your favourite ingredients to give it your own personal touch!

Makes: 36 torticas de coco

  • 2 egg whites
  • 225g caster sugar
  • 55g corn flakes
  • 145g chopped raisins or sultanas
  • 60g chopped nuts
  • 75g coconut flakes
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract

Prep:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Preheat the oven to 190 C / Gas 5. Grease a baking tray.
  2. Whisk the egg whites until light and fluffy. Slowly fold in sugar until egg whites become stiff and glossy. Fold in remaining ingredients slowly.
  3. Spoon the mixture into individual teaspoon-sized lumps onto the prepared baking tray.
  4. Bake in the preheated oven for 15 to 20 minutes and allow to cool before serving.


Get your Cuban food supplies at Cuban Cuisine UK:
Depending on your inclination, you can use pineapple or banana extract in place of the coconut extract.
Walnut, pecan or peanuts work well for this recipe.
