Sweet and summery iced tea

    This is a lovely summer drink, perfect on a hot afternoon served with ice, lemon and a sprig of mint!

    Makes: 2 litres iced tea

    • 1L boiling water
    • 4 plain tea bags
    • 200g caster sugar
    • 1L cold water
    • 1 lemon
    • fresh mint, to taste

    1. In the boiling water, brew the tea bags for 5 minutes. Do not leave for longer than 5 minutes as the tea will go bitter.
    2. Meanwhile, as the tea bags are brewing, mix together the sugar and cold water in a jug until the sugar is dissolved.
    3. Remove the tea bags and discard. Add the hot tea to the jug and stir well. Chop the lemon in half, juice one half and add the juice to the jug. Slice the other half thinly and add to the jug. Add mint sprigs.
    4. Leave to chill. Serve over ice and make sure you get some mint and a lemon slice in each glass when pouring.


    If you think this is a lot of sugar to add, you could adjust it to taste. You could add more lemon juice as well if you like the taste, but it does make the drink go cloudy.
    You could use flavoured tea bags if you prefer.
