About this recipe: These delightful goat's cheese pots are flavourful, colourful and just perfect for keeping hungry family and friends at bay. Perfect as a starter, serve with melba toast or some posh crisps for dipping.


Serves: 4 

  • 150g soft goat's cheese
  • 55g sun dried tomatoes, chopped
  • 1/2 teaspoon chopped fresh chives
  • 2 to 4 tablespoons olive oil
  • anchovy fillets, to taste

  1. Preheat the oven to 190 C / Gas 6.
  2. In a bowl, mix together the cheese, tomatoes and chives. Divide the mixture evenly between two ramekin dishes. Add a couple of tablespoons of olive oil over each one then top with an anchovy fillet. Season.
  3. Bake in the preheated oven for 10 minutes. Serve warm or cold.
