150g soft goat's cheese
55g sun dried tomatoes, chopped
1/2 teaspoon chopped fresh chives
2 to 4 tablespoons olive oil
anchovy fillets, to taste

Preheat the oven to 190 C / Gas 6.
In a bowl, mix together the cheese, tomatoes and chives. Divide the mixture evenly between two ramekin dishes. Add a couple of tablespoons of olive oil over each one then top with an anchovy fillet. Season.
Bake in the preheated oven for 10 minutes. Serve warm or cold.
