    About this recipe: Banh Mi is a Vietnamese sandwich and a nice fusion of east and west. As bread isn’t an option with the Kinect Method food plan, I’ve left it out. No one gets fat from eating meat and vegetables so just make a bigger portion of that to keep you feeling full. The fresh salad is much like coleslaw with the coriander and mint giving it an Asian twist and a perfect summer dish. It really is worth taking the time to marinade the pork overnight as it makes it so much juicier. Any suggestions would be greatly appreciated in the comments section below.

    Ingredients
    Serves: 2 

    • 500g pork loin, sliced into 1cm pieces
    • 3 cloves garlic, thinly sliced
    • 3 tablespoons fish sauce
    • 1 teaspoon black pepper
    • 3 tablespoons omega 3 mayonnaise
    • juice of 1 lime
    • 1/2 white cabbage, grated
    • 3 carrots, grated
    • 2 onions, chopped
    • 1 cucumber, sliced
    • handful fresh mint leaves
    • handful fresh coriander leaves
    • 2 to 3 tablespoons olive oil or coconut oil
    • chopped chilli to taste

    Method

    1. Put the pork, garlic, fish sauce and black pepper in a sealed bag or container to marinate for at least a few hours. Leave overnight in the fridge if possible.
    2. In a small bowl, whisk together the mayonnaise and lime. If you like a lot of dressing on your salad, double the amounts used. Set aside.
    3. Combine all the vegetables and herbs in a large bowl. Set aside.
    4. Heat several tablespoons of olive oil or coconut oil in a pan over a medium-high heat. Add the pork, frying for 3 to 4 minutes on each side, and the chopped chilli. Remove from the pan. Slice the medallions of pork into thin strips and mix with the vegetable and herbs. Pour dressing on top. Toss well and serve.

    A lovely light lunch on a warm day. Chilli gives warmth, mint n lime refreshing the palate, reduce the salad ingredient as it was too much for 2 of us. Changed the cucumber for courgette. - 07 Aug 2015
