Fruit and nut pancake

    Takes a little more effort but a nice change from eggs for breakfast. The banana makes the pancakes taste really sweet to give you a morning boost. The walnuts give them a nice soft and crunchy combination. Paleo and primal diet friendly.

    Serves: 1 

    • 1 banana
    • 1 tablespoon almond butter
    • 1 free range egg
    • 1 teaspoon coconut oil
    • 1 handful walnuts
    • 1 handful fresh blueberries

    Prep:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Peel the bananas and mash them in a bowl until they are creamy. Add the almond butter and egg and whisk until well blended.
    2. Heat a pan with the coconut oil and pour the mixture into the pan.
    3. Cook on one side and flip over. Add the walnuts and blueberries to one side of the pancake. Fold and serve.
