Japanese tuna salad

    A Japanese-style tuna and sweetcorn salad that's packed with vegetables and flavoured with green shiso leaves. You can find shiso in Asian supermarkets or you can use fresh mint instead.

    Serves: 4 

    • 3 radishes, peeled and sliced into matchsticks
    • 1/2 carrot, peeled and sliced into matchsticks
    • 1 cucumber, peeled and sliced into strips
    • salt, to taste
    • 1 (160g) tin tuna chunks in oil, drained
    • 100g frozen sweetcorn, thawed
    • 4 or 5 tablespoons mayonnaise
    • 2 or 3 green shiso leaves, finely chopped
    • sesame seeds to garnish (optional)

    1. Place radishes, carrots and cucumber in a bowl. Season with salt; toss vegetables well and set aside for 5 minutes.
    2. Add tuna and sweetcorn; stir in mayonnaise and finely chopped shiso leaves until well combined. Sprinkle sesame seeds on top, if desired.
