Banana and chocolate loaf

    This is a great recipe to either serve cold sliced or hot with ice-cream or whipped cream. I have made this a few times and each time everyone has enjoyed it. Perfect for the whole family to enjoy.

    Makes: 1 banana and chocolate loaf

    • 2 tablespoons of unsalted butter
    • 150g of caster sugar
    • 1 egg, lightly beaten
    • 3 large ripe bananas, mashed
    • 8 tablespoons cocoa powder
    • 60g ground roast hazelnuts, ground
    • 175g of plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 2 tablespoons of milk

    1. Preheat oven to about 170 C / Gas 4 and line a large cake tin.
    2. Mix the butter, sugar and egg until smooth. Add the bananas and stir until smooth. Add the cocoa and ground hazelnuts. Mix well. Sift in the flour, baking powder and bicarbonate then add the milk and stir until combined. Pour the mixture into the prepared tin.
    3. Bake for about an hour or so, until a skewer inserted into the centre comes out clean.


    *Optional - 70% cocoa good quality dark chocolate cut into little chunks or chocolate chips.

    Great tasting cake although I should've added one more banana because you could barely taste it in mine  -  02 Jul 2015
