Courgette lasagne

    I'm fast disappearing under a courgette mountain. This is my contribution to us poor gardeners who can't even give away our courgettes.

    Makes: 1 courgette lasagne

    • 4 onions, chopped
    • 2 cloves garlic, crushed or chopped
    • oil, for cooking
    • 2 tins chopped tomatoes
    • chilli flakes, to taste
    • Worcestershire sauce, to taste
    • 6 courgettes, grated
    • 1 packet lasagne sheets
    • 600ml white sauce
    • 1 to 2 tablespoons milk
    • cheese, to taste

    1. Preheat the oven to 180 C / Gas 4.
    2. To make the tomato sauce, sauté 2 chopped onions and one clove of crushed garlic in a pan with some oil until soft. Add 2 tins of chopped tomatoes (or your own tomatoes if you have a mountain of those too). Season with a few chilli flakes and Worcestershire sauce. Leave to simmer.
    3. Sauté the other two onions in another pan, add the other clove of crushed garlic garlic and the grated courgettes. Allow to soften, season with salt an pepper.
    4. Oil the bottom and sides of your lasagne dish, add a little milk, just to barely cover the bottom of the dish. Layer lasagne, courgettes, lasagne, tomato sauce, lasagne until the dish is almost full. Finish off with a layer of lasagne and then cover in the white sauce. Top with grated cheese.
    5. Bake in the preheated oven until the top is crisp toasted cheese.


    Use your favourite cheese to top this lasagne.
    If you wish to make your own white sauce you can create it using flour and butter to make a roux, add milk stir until thickened. You need about a 600ml, depending on how big your lasagne dish is.

    Courgettes are a popular veg in our house and this dish went down a storm, beautifully rich, moreish and filling. Made my own tomato sauce with a glut of cherry toms from the greenhouse, lovely.  -  07 Aug 2017
