Scrummy, yummy omelette

    A fantastic omelette to have as a snack or with a salad for lunch, dinner or supper. A firm family favourite. The measures are just guidelines, and you can use your favourite fillings.

    Ingredients
    Serves: 1 

    • 2 eggs
    • splash of milk
    • cooking oil for frying
    • 1 tablespoon chopped onion (cooking or spring onion, what ever you have)
    • 2 tablespoons chopped, de-seeded tomato
    • 2 tablespoons chopped sandwich ham (or chicken of you prefer)
    • 2 tablespoons grated cheese
    • 1 tablespoon sweetcorn kernels

    Method
    Prep:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Crack eggs into a jug, add a splash of milk and whisk with a fork.
    2. Put oil in the frying pan and heat on a low heat.
    3. Add half the cheese, onion, tomatoes, ham and sweetcorn into egg mixture and whisk again.
    4. Pour mixture into frying pan. Add the remainder of cheese. Fry on a low heat for 2 minutes.
    5. Flip "pancake" over to melt the cheese and cook for another 2 minutes.
    6. Serve immediately. Serve with salad and crusty bread.

    Tip

    Although this is listed as a omelette, I cook it as a pancake. However, instead of turning it over, just fold in half and cook each side for one minute each.
