Perfect vanilla cupcakes

    A moist cupcake, perfect but simple, that tastes amazing but also is great if guests are coming over unexpectedly. Why not make this or make this as a treat for the kids.

    Makes: 1 dozen cupcakes

    • 110g (4 oz) butter or margarine at room temp
    • 110g (4 oz) caster sugar
    • 2 medium eggs
    • 1 teaspoon vanilla extract
    • 110g (4 oz) self-raising flour
    • 1 pinch bicarbonate of soda
    • 1 pinch baking powder
    • 1 to 2 tablespoons milk

    1. Preheat your oven to 180 C / Gas 4. Line a muffin tin with paper cases.
    2. Beat the butter and sugar together till pale and creamy. Lightly whisk the eggs together with the vanilla, then add gradually to the butter mixture, beating well.
    3. Combine the flour, bicarb and baking powder in a separate bowl. Add to the butter mixture and fold together gently, adding milk only as needed to achieve a smooth mixture that drops easily from your spoon. Spoon the cupcake mixture into the prepared cases, about half full.
    4. Bake for 10 to 15 minutes in the preheated oven, or till golden and risen. Remove from oven and cool in the tin slightly before removing from the tin to cool completely.
    5. Now that it has cooled - Eat, Share, ENJOY!

    i made it and it was amazing better than the normal vanilla recipe because it was moist and flavour was a 10/10  -  16 Aug 2013


    Very buttery and moist, completely different to the recipe I was taught how to make as a child. But this recipe is delicious! 😀  -  15 May 2015
