Squid and prawn salad

    This is a wonderful chilled seafood salad with squid and prawns, with just a sensation of heat from the chilli cooled down by citrus flavours. Enjoy with some crunchy chicory or in the leaf cups of a little gem lettuce.

    Serves: 4 

    • 450g squid, cleaned
    • 250g prawns, cooked and shelled
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons chopped fresh chives
    • 1 tablespoon chopped fresh coriander
    • 3 tablespoons olive oil
    • 1 teaspoon sesame oil
    • 1 tablespoon lemon juice
    • 1/4 teaspoon red chilli, seeded and finely chopped
    • salt and pepper, to taste

    1. Cut the squid into rings and chop the tentacles. Bring a saucepan of water to the boil and add the squid, cooking for only a minute. Remove from the water with a slotted spoon and cool immediately with cold water.
    2. In a bowl, combine the squid with the prawns, fresh herbs, oils, lemon juice, chilli and seasoning. Mix well. Chill in the fridge for 2 hours prior to serving.
