Thinly slice the courgettes into long strips using a grater, mandoline or sharp knife. Aim to produce slices that are only 1-2mm thick.
Put the oil and butter in a heavy pan and heat on medium. When the oil is hot add the sliced courgettes and saute until softened, stirring occasionally. This takes only 2 to 3 minutes but a bit longer if you have more courgettes
Add the herbs and squeeze in the juice of half a lemon. Stir to mix and transfer to a serving dish. Grind on some black pepper.
It would be fine to use dried herbs if you did not have fresh but you don't need as much.
