200ml crème fraîche
2 tablespoons lemon curd
1 teaspoon lemon juice
4 passion fruits

In a bowl, whisk the double cream until stiff then fold in the crème fraîche. Add the lemon curd and the lemon juice and mix well. Remove the flesh and seeds from the passion fruit and fold these in to the mixture. Discard the skins.
Transfer the syllabub to 4 ramekin dishes and chill in the fridge until time to serve.
Look for fruit that have slightly shrivelled skins, this is an indicator of sweetness and maturity.
