Heart warming red berry crumble

    This red berry crumble is egg free, absolutely outstandingly beautiful and heart-warming served with egg-free vanilla ice cream (Carte d'Or® is lovely). The mix between the cold of the ice cream and the warmth of the crumble is divine! The best crumble you will find here!

    Serves: 6 

    • For the filling
    • 500g frozen red berries, all types
    • 30g brown sugar
    • For the crumble
    • 300g plain flour
    • 175g brown sugar
    • 1 pinch salt
    • 200g butter, cubed (at room temperature)
    • 1 teaspoon vanilla extract, or to taste

    1. Preheat the oven to 180C / Gas 4.
    2. For the filling:

    3. Place all the berries in a saucepan with brown sugar and mix well. Heat for 7 minutes then drain and discard any excess juice.
    4. Place the berries at the bottom of greased individual pots or a baking dish and leave about a quarter to a third of the dish depth for the crumble.
    5. For the crumble:

    6. Sift the flour into a big bowl then add the sugar and salt. Mix well.
    7. Add the cubed butter and a little vanilla extract and work well into mixture until you start getting a rough crumbly mixture (the more uneven the crumbs, the nicer in the end).
    8. Add the crumbs on top of the berries until all the fruits are covered.
    9. Bake at the preheated oven for 40 minutes until the crumbs are golden brown. Remove from the oven and serve hot.
