    About this recipe: Giant muffins that are so delicious and soft and chocolatey, you will never believe they are actually egg-free! enjoy with tea in front of Eastenders.

    Ingredients
    Makes: 16 chocolate chip muffins

    • 200g plain flour
    • 100g brown sugar
    • 1/2 tablespoon baking powder
    • 1 pinch salt
    • 50g melted butter or vegetable oil
    • 200ml low fat milk or soya milk
    • 100g chocolate chips (plain or dark)

    Method
    Prep:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Preheat the oven 190 C / Gas 5. Grease 6 muffin pots.
    2. Mix the flour, sugar, baking powder and the salt together.
    3. Add the melted butter or oil and mix well with a fork or hand whisk. Add the milk and mix well until well beaten.
    4. Add the chocolate chips and mix to disperse them evenly. Transfer the mixture into the prepared muffin pots.
    5. Bake for 15 to 20 minutes until risen and a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool before removing from the pots.

    Tip

    If you do not have individual muffin pots you can also use a muffin tin or ramekin dishes. Allow plenty of space for the muffin to rise.

    Great egg free recipe, slightly moist and doughy muffin which disappeared quickly! Made it dairy free as well (oat milk, vitalite & dairy free choc chips) - ideal for our dairy/egg/nut free play date with friends! Also added some dried cranberries.     Probably the worst cake I have ever made and I've baked a lot. Tasteless, not at all sweet and very stodgy. Not having any eggs in the fridge I thought I would try this. My son just about ate one with a much needed glass of juice to wash it down! not a good result... - 07 May 2014
