Egg-free chocolate oat biscuits

    Perfect with a big glass of milk! Better than any brand you will find in your supermarket. They are scrumptious and egg-free like all my other recipes. Absolutely divine warm and dunked into a large glass of fresh milk.

    Serves: 8 

    • 150g self raising flour
    • 150g caster sugar
    • 150g porridge oats
    • 150g butter
    • 1 tablespoon golden syrup
    • 1 tablespoon soy milk
    • 1/2 teaspoon vanilla extract
    • 100g chocolate chips (plain or dark)

    1. Preheat the oven to 180 C / Gas 4. Grease a baking tray.
    2. Sift the flour and and combine with the sugar into a large bowl. Add the oats and mix well with a hand whisk (I always prefer a hand whisk. Always good to get a better feel of the mixture and it is less messy than an electric whisk).
    3. Melt the butter, syrup and milk in a saucepan over a medium heat and stir well. Do not let it burn or stick to the pan. Remove from the heat and add the vanilla extract.
    4. Add to the mixture in the large bowl and mix until well combined. Add the chocolate chips.
    5. Spoon onto a baking tray and shape into rounds. Make sure to leave enough space between the biscuits so that they do not bind to each other.
    6. Bake for 15 to 20 minutes in the preheated oven until golden brown.
    7. Leave to cool for 5 minutes.


    If you do not have vanilla extract on hand you can substitute with 1/2 sachet of vanilla sugar.
