Jubilee Cheesecake

    An easy and simple Cheesecake!

    • 200g digestive biscuits,crushed
    • 100g butter,melted
    • 397g can carnation condensed milk
    • 300g tub full fat soft cheese
    • Juice 2 lemons
    • 200g mixed summer berries


    1. Tip the crumbs into a bowl,add the butter and mix it. Spoon the crumbs into a tin and press down. Chill for 10 minutes in refrigerator.
    2. Pour condensed milk into a large bowl.Add soft cheese and whisk together.Mix in lemon juice. (Watch it thicken) Pour into tin. Chill for 2-4 hours or until set.
    3. To serve,take the cheesecake out of a tin and place onto a plate.Decorate the cheesecake with berries in union jack style before serving.
