Cream the butter and sugar together. Add the egg, vanilla and finally the flour. For easier rolling, wrap the dough in cling film and chill in the fridge or the freezer for 5 minutes.
Roll the dough out into a pizza shape and place on a baking tray lined with parchment.
Bake the base in the oven until the edges are golden brown. Remove and let cool completely.
For the topping, whip the cream with the vanilla and sugar to taste, till stiff peaks form. Spoon the whipped cream over the cooled base. Top with fresh fruit of your choice right before serving: berries, sliced mango, kiwi fruit, pomegranate seeds, banana, etc.
