Creamy chicken, mushroom and bacon pasta

    A creamy chicken pasta dish that tingles the taste buds. Try using bacon bits or pancetta cubes. Garden peas could be added, and can be served with garlic bread if liked.

    Serves: 2 

    • 2 chicken breast fillets, diced
    • 1 pot whipping cream
    • 100g mushrooms, sliced
    • 2 packs smoked bacon cubes
    • 1 pinch salt
    • 1 pinch dried mixed herbs
    • 200g pasta of choice
    • olive oil

    1. Heat the oil in a frying pan or wok over medium high heat. Add chicken and cook till browned and the juices run clear.
    2. Add sliced mushrooms and bacon cubes to the pan, and cook for 2 to 3 minutes, till the bacon is crisp. Pour in the cream and simmer the mixture for 7 minutes; do not boil.
    3. Meanwhile, cook pasta according to packet instructions.
    4. Season the cream sauce with salt and herbs to taste. Drain the pasta and combine with the sauce. Serve straightaway and enjoy!
