  • 200g/6.5oz dry macaroni pasta
  • 60g/2oz butter or margerine
  • 1 chopped onion or 2 tsp onion salt
  • 2 chopped rashers bacon or 100g lardons
  • 30g/1oz plain flour
  • 600ml semi-skimmed milk
  • 2 tsp mixed herbs
  • 200g grated cheddar cheese


  1. Preheat oven to 180-200 °C or gas mark 4. Grease a 1.5 litre ovenproof dish.
  2. Cook the macaroni in boiling water for approx. 8 mins or until tender, then drain. Do this while you complete the other steps.
  3. Heat butter in a large pan, add onion & bacon. Stir over medium heat for 4 mins. Add the flour & stir over low heat for 1 minute.
  4. Remove from heat & gradually add the milk, stirring until smooth. Return to medium heat & cook for 4 mins, stirring until mixture boils & thickens. Simmer over low heat for 1 minute.
  5. Remove from heat. Season with herbs, salt & pepper.
  6. Add the macaroni & approx. two thirds of the grated cheese. Stir, then spoon into the prepared dish. Sprinkle with remaining cheese & bake for approx. 25 mins or until lightly golden.


This serves 4.
