This is a lovely way to cook a pork fillet, also known as a pork tenderloin. Juicy, vibrant and perfect served with rice, mash or fresh steamed vegetables.

300g pork tenderloin
salt and pepper, to taste
1 tablespoon olive oil
zest and juice of 2 lemons
1 tablespoon chopped root ginger
4 tablespoons water
2 tablespoons light soy sauce
2 dessertspoons honey
2 teaspoons cornflour
6 spring onions, finely chopped

Slice the pork tenderloin into medallions about 2cm thick. Season and cook in a little warmed olive oil to brown on both sides. Reduce the heat and add the lemon zest and juice, ginger, water, soy sauce, honey and cornflour. Simmer and stir for 6 to 8 minutes then add the spring onions. Remove from the heat and serve.
