Slow cooker lamb kleftiko
This delightful Greek dish is a favourite in our household. In this dish, lamb shanks are slow cooked in stock and white wine with vegetables and herbs. I absolutely love using my homemade spice mix for this recipe.
Ingredients

- 4 tablespoons butter
- 2kg lamb shanks
- 2 tablespoons olive oil
- 8 shallots, chopped
- 6 carrots, sliced
- 2 sticks celery, sliced
- 6 cloves garlic, chopped
- 4 large tomatoes, quartered
- 225g green olives
- 4 bay leaves
- 1 sprig rosemary
- 2 to 3 tablespoons lamb spice mix (optional)
- 300ml vegetable stock
- 300ml white wine
- salt and pepper, to taste

- In a casserole dish, melt the butter and add the lamb. Brown the shanks on all sides. Remove from the dish and set aside. Add the oil and combine the shallots, carrots, celery and garlic and cook and stir for 3 to 4 minutes until soft. Add the tomatoes, olives, bay leaves, rosemary and spice mix. Stir well then add the stock and wine, then return the lamb back to the dish and bring to the boil.
- Transfer everything to a slow cooker and cook on medium high for about 6 hours until the lamb is tender and falling off the bone. Skim off any fat and serve.
