    These lovely bacon, lettuce and tomato fajitas are a innovative way to combine two favourite dishes into one.

    Serves: 4 

    • 2 ripe avocados, roughly chopped
    • 1 red chilli, deseeded and finely chopped
    • 2 tablespoons chopped fresh coriander
    • juice of 1 lime
    • salt and pepper, to taste
    • 16 rashers back bacon, fat trimmed if necessary
    • 8 plain flour tortilla wraps, warmed
    • 2 small sweet gem lettuces, spine removed and chopped
    • 3 beefsteak tomatoes, sliced
    • soured cream, to taste (optional)

    1. Place the avocado into a bowl with the chilli, coriander and lime juice and season to taste with freshly ground black pepper. Chill until ready to use.
    2. Pre-heat the grill to high and arrange the bacon on a foil lined tray and cook for 3 to 4 minutes until crispy. Drain well on kitchen paper.
    3. Arrange the warmed tortillas onto serving plate. Divide the lettuce between the flour tortillas. Top with the sliced tomato, crispy bacon and avocado salsa, then wrap and serve immediately with soured cream topping if liked.
