A salty, sweet and crisp salad with cubed halloumi cheese, fresh red grapes and cool cucumber. Mint, lemon juice and honey bring it all together in this deliciously different recipe.
1 handful chopped mint, plus whole leaves to serve
2 tablespoons lemon juice
4 tablespoons extra virgin olive oil
2 tablespoons clear honey
salt and pepper to taste
1 tablespoon olive oil
250g (9 oz) halloumi cheese, drained and cubed
2 tablespoons toasted flaked almonds

In a serving bowl, toss together the cucumber, grapes and the chopped mint. Set aside.
In a small bowl take the lemon juice, honey and 4 tablespoons olive oil for the salad dressing and whisk together. Season to taste and set aside.
Heat the 1 tablespoon olive oil in a large non-stick frying pan and cook the halloumi, turning occasionally, until golden all over. Remove and allow to cool a little.
To serve, add the halloumi to the salad ingredients, spoon over the dressing and scatter with the toasted almonds.
