About this recipe: Why not try this easy to do cheesecake. It's easily adaptable, too, as you can use any flavour you wish.

Serves: 6 

  • 1/2 pack digestive biscuits, crushed
  • 1/2 pack ginger biscuits, crushed
  • 2 dessertspoons melted butter
  • 200g cream cheese
  • 1 tub extra thick cream
  • icing sugar to taste
  • 1 teaspoon vanilla extract

  1. Combine biscuits and butter. Press into the bottom of a round cake tin.
  2. Beat together cream cheese, cream, icing sugar and vanilla.
  3. Top biscuit base with mixture and chill for an hour or so.

Flavour ideas

In addition to vanilla, you can add a variety of other flavourings. Try adding lemon zest for a lemon cheesecake. Or try stirring in a large handful of chocolate chips. You could also top the cheesecake with your favourite fresh fruit, fruit compote or jam. Stir in a spoonful of orange marmalade and grate the top with chocolate for a chocolate orange cheesecake. There are so many ways to make this your own recipe!
