    About this recipe: Makes plenty, and never lasts long! These are big and chewy cookies with lots of chocolate chips and extra vanilla for loads of flavour.

    Makes: 16 to 18 cookies

    • 250g plain flour
    • 1/2 teaspoon salt
    • 1/2 teaspoon bicarbonate of soda
    • 175g melted butter
    • 220g soft brown sugar
    • 1 egg
    • 1 egg yolk
    • 1 tablespoon vanilla extract
    • 300g chocolate chips

    1. Preheat oven to 170 C / Gas 3. Line a baking tray with parchment.
    2. In a large bowl sift together flour, salt and bicarb.
    3. In a separate bowl beat together melted butter, brown sugar, egg, egg yolk and vanilla extract. Gradually add flour and chocolate chips and mix together. Make large mounds of cookie dough, about 3 to 4 tablespoons each, and place on the prepared tray, spacing 8cm apart on the tray.
    4. Bake for 15 to 17 minutes. Cool slightly on the tray then remove to a wire rack to cool completely. Serve and enjoy!
