Mango and chilli salad

    A really delicious and easy to make salad, with a slight twist. Very nice contrast from the saltiness of the salad to sweetness of the mango, and chilli gives the salad a nice little kick. The best thing about it, is that it's quick to make.

    Serves: 4 

    • 1 slightly ripe mango
    • 1 pepper
    • 1 onion
    • 1/2 cucumber
    • 1 to 3 small red chillies (to taste)
    • salt and pepper to taste
    • 1 to 2 tablespoons olive oil

    1. Peel and cut the mango into long, thin shreds and place it in a bowl.
    2. Chop up the other ingredients (pepper, onion, cucumber, chilli), and then mix in with the mango, but remember to be careful with the chilli, you don't want to get any in your eyes.
    3. Add the salt, olive oil and pepper and mix it all and that's it, your mango and chilli salad is ready!! Enjoy!


    With this you don't have to follow the quantities to a tee, you can add or take away as much as you want from the recipe, I know I did until I finally made it to my liking.
