Last minute apple tart

    Apple tarts don't get easier than this. A great recipe and I almost always have the ingredients lying around, so perfect for last minute dinner gatherings.

    Serves: 6 

    • 1 packet puff pastry
    • 110g butter
    • 200g brown sugar
    • 2 eggs, beaten
    • juice and zest of 1 lemon
    • 2 cooking apples - peeled, cored and grated
    • 1 pinch ground cinnamon
    • 1 pinch ground nutmeg
    • single cream, to taste

    1. Preheat the oven to 180 C / Gas 4. Grease a baking tray.
    2. Roll out the puff pastry to about 1cm thick and place on the prepared baking tray. In a bowl, cream together the butter and sugar until light and fluffy then add the egg, lemon juice and zest mixing well. Fold in the grated apple and spoon the mixture over the puff pastry. Sprinkle the spices over the tart.
    3. Bake in the preheated oven for 45 minutes until golden brown and set. Serve hot from the oven with a little cream.
