Terry's chocolate orange cupcakes

    These are simple chocolate cupcakes with a hint of orange flavour that can be left plain or decorated with icing as desired.

    Makes: 12 cupcakes

    • 85g self raising flour
    • 25g cocoa powder
    • 110g caster sugar
    • 110g butter or margarine, softened
    • 2 eggs, beaten
    • 2 tablespoons milk
    • 2 teaspoons orange flavouring
    • chocolate chips (optional)

    1. Preheat the oven to 180 C / 160 C fan / Gas 4. Place 8 to 12 paper cases into your cupcake tin depending on how small or large you want the cupcakes to be.
    2. Sift the flour and cocoa into a bowl and put to one side. Using an electric whisk, cream sugar and butter together until light and fluffy. Gradually add the beaten eggs, milk, orange flavouring and 2 to 3 tablespoons chocolate chips with a little of the flour. Gently fold in the remainder of the flour until all the ingredients are combined.
    3. Evenly distribute the mixture amongst the cake cases.
    4. Bake until a skewer comes out clean, about 20 minutes. Place on a cooling rack. Decorate to taste.
