Classic gingerbread cake

    This is an old recipe that I have had kicking around for years. I always enjoy making it in a loaf tin, but you could spread it out into more of a traybake if you prefer.

    Makes: 1 gingerbread cake

    • 55g margarine
    • 55g brown sugar
    • 110g treacle
    • 6 tablespoons milk
    • 1/2 teaspoon bicarbonate of soda
    • 1 teaspoon ground ginger
    • 1/2 teaspoon ground nutmeg
    • 1/2 teaspoon ground cinnamon
    • 225g plain flour

    1. Preheat the oven to 180 C / Gas 4. Grease a loaf tin or deep baking tray.
    2. Combine the margarine, sugar, treacle and milk in a saucepan over medium heat. Cook, stirring occasionally, for 5 minutes, till the sugar has dissolved. In a bowl, sift all the dry ingredients together and mix. Combine the wet and dry ingredients and mix well. Pour into the prepared tin.
    3. Bake for 30 to 40 minutes until a skewer inserted into the centre comes out clean.
