Favourite fruit buns

    We eat these all the time at our house. Add in chopped dried fruit of your choice, or mixed dried fruit depending on your taste preferences.

    Makes: 12 fruit buns

    • 60g margarine or butter (I use half marg, half butter)
    • 70g caster sugar
    • 1 large egg
    • 90g plain flour
    • 1 teaspoon baking powder
    • 30ml milk (optional)
    • 100g dried fruit
    • a few glacé cherries, quartered

    1. Preheat the oven to 180 C / Gas 4. Line a muffin tin with paper cases.
    2. In a mixer bowl combine the butter, caster sugar and egg and beat well until fluffy and light. Sieve the flour and baking powder and fold into the beaten ingredients. Add the milk, a little at a time to loosen the mixture if necessary. Finally fold in the dried fruit, reserving the glacé cherries. Place 2 or 3 pieces of cherry on top of each cake and mix until well integrated. Spoon the mixture equally into the prepared paper cases, filling only to 3/4 full to allow for a good rise.
    3. Bake in the preheated oven for 15 to 20 minutes, or until risen, golden brown and a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool on a cooling rack before serving and enjoying.

    Absolutely rubbish, sank in the middle and tasted of baking powder, I've cooked many many cakes over the years even cup cakes for wedding but these are the worse I've ever made, 😔  -  09 Nov 2015


    Buns were delicious but took some time rereading the instructions. Trying to work out when to add the 30ml of milk. Decided to leave out all together and buns turned fine.☺  -  10 Jul 2015
