About this recipe: Makes a great birthday cake! I used this recipe for my brother's birthday last year and his friends loved it.

Makes: 1 (20cm) sandwich cake

  • 2 eggs
  • self raising flour
  • butter or margarine, room temperature
  • caster sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • Filling
  • jam
  • buttercream icing

  1. Preheat the oven to 190 C / Gas 5. Grease two 20cm (8 in) sandwich tins.
  2. Weigh the eggs in their shells. Note the weight, then weigh out the flour, butter and sugar to the same weight.
  3. Beat the butter till soft and fluffy. Add sugar and beat till creamy. Sift in the flour and mix gently.
  4. Beat the eggs, milk and vanilla in a jug and add to the butter mixture. Mix well. Divide the mixture between the two tins.
  5. Bake the cakes for 35 minutes, or till a skewer inserted in the centre comes out clean. Cool on a wire rack.
  6. Remove cakes from tins. Set the bottom cake on a serving plate and top with jam and buttercream icing. Place the other cake on top and decorate as desired.
