    About this recipe: This wonderful winter warmer is sure to please the whole family.     Ingredients
    Serves: 6 

    • 1 tablespoon rapeseed oil
    • 12 thick pork sausages
    • 1 onion, chopped
    • 300g chestnut mushrooms, halved
    • 1 red pepper, seeded and cut into strips
    • 1 clove garlic, chopped
    • 1 teaspoon paprika
    • 1 (410g) tin butter beans, drained
    • 1 (400g) tin chopped tomatoes
    • 1 teaspoon sugar
    • 1 splash Worcestershire sauce
    • salt and pepper, to taste
    • 1 handful dried breadcrumbs
    • 100g mature Cheddar cheese, grated
    • 4 potatoes, peeled and diced
    • 1/2 swede, peeled and diced
    • 4 carrots, peeled and diced
    • 1 splash milk
    • 1 to 2 teaspoons butter

    Method

    1. Preheat the oven to 180 C / Gas 4.
    2. Heat the oil in a pan and add the sausages. Brown them on all sides for about five minutes - you just need to give them some colour, not to cook them through at this stage.
    3. When they start getting some colour, add the onion, mushrooms and pepper. Cook for another five minutes, stirring occasionally.
    4. Add the garlic and paprika and cook for a minute, stirring constantly to make sure the paprika is well distributed and the garlic doesn't burn.
    5. Now add the butter beans, tomatoes, sugar and Worcestershire sauce. Stir well.
    6. Season with salt and pepper to taste, stir well and transfer to a roasting dish. Mix the breadcrumbs with the Cheddar and sprinkle on top.
    7. Bake in the preheated oven for 25 minutes or until the top is browned and the sausages are no longer pink in the middle.
    8. Meanwhile, make the mash. Put all the vegetables into a pan of salted water and bring to the boil. Simmer for 25 minutes or until everything is soft.
    9. Drain the water and mash all the vegetables. Over a low heat, stir in the milk and butter until they are well mixed. Remove the bake from the oven, and serve with the mash.
