Pork sausage and butter bean bake with root vegetable mash

- 1 tablespoon rapeseed oil
- 12 thick pork sausages
- 1 onion, chopped
- 300g chestnut mushrooms, halved
- 1 red pepper, seeded and cut into strips
- 1 clove garlic, chopped
- 1 teaspoon paprika
- 1 (410g) tin butter beans, drained
- 1 (400g) tin chopped tomatoes
- 1 teaspoon sugar
- 1 splash Worcestershire sauce
- salt and pepper, to taste
- 1 handful dried breadcrumbs
- 100g mature Cheddar cheese, grated
- 4 potatoes, peeled and diced
- 1/2 swede, peeled and diced
- 4 carrots, peeled and diced
- 1 splash milk
- 1 to 2 teaspoons butter

- Preheat the oven to 180 C / Gas 4.
- Heat the oil in a pan and add the sausages. Brown them on all sides for about five minutes - you just need to give them some colour, not to cook them through at this stage.
- When they start getting some colour, add the onion, mushrooms and pepper. Cook for another five minutes, stirring occasionally.
- Add the garlic and paprika and cook for a minute, stirring constantly to make sure the paprika is well distributed and the garlic doesn't burn.
- Now add the butter beans, tomatoes, sugar and Worcestershire sauce. Stir well.
- Season with salt and pepper to taste, stir well and transfer to a roasting dish. Mix the breadcrumbs with the Cheddar and sprinkle on top.
- Bake in the preheated oven for 25 minutes or until the top is browned and the sausages are no longer pink in the middle.
- Meanwhile, make the mash. Put all the vegetables into a pan of salted water and bring to the boil. Simmer for 25 minutes or until everything is soft.
- Drain the water and mash all the vegetables. Over a low heat, stir in the milk and butter until they are well mixed. Remove the bake from the oven, and serve with the mash.
