Simple fruit cake

    This quick and easy fruit cake is great when you need something tasty in a hurry, and you have just the basics in the pantry.

    Serves: 8 

    • 225g (8 oz) mixed dried fruit
    • 110g (4 oz) soft brown sugar
    • 110g (4 oz) margarine
    • 1 teaspoon mixed spice
    • 150ml (5 fl oz) water
    • 225g (8 oz) self raising flour
    • 1 egg

    Prep:10min  ›  Cook:1hr30min  ›  Ready in:1hr40min 

    1. Combine the fruit, sugar, margarine, mixed spice and water in a pan and simmer for 20 minutes. Allow to cool.
    2. Preheat the oven to 190 C / Gas 5. Grease and line one 15cm (6 in) cake tin with baking parchment.
    3. Stir in the flour and egg to the cooled mixture then pour into the prepared cake tins.
    4. Bake in the preheated oven for 60 to 90 minutes or until a skewer inserted into the centre comes out clean.

    Lovely, easy recipe, great flavour and texture. It was only in my oven for 45 mins (I don't have a fan oven). Delicious, I will definitely be making this again  -  08 Aug 2014


    Just tried a slice of this cake,it was full of flavour will have to make another one. The one thing that was different was the time in the oven,i only needed to keep it in for about 40mins wether it was to do with having a fan assisted oven or not I,m not sure.Other than that it was lovely  -  25 Mar 2014
