Line a tray with baking parchment.
Combine all ingredients in a saucepan and simmer gently for about 1 hour, stirring frequently, until the mixture thickens and begins to turn a light brown colour. When the mixture becomes very thick and looks just about like it is going to set, remove from the heat and pour quickly into the prepared tray. Mark out into squares and allow to cool.
This fudge can easily be made into chocolate fudge, by adding a tablespoon of cocoa powder to the mix.
i found that this recipe was quite easy however it didnt thicken in the pan as suggested in the post above, i put it in my mixer for a good 5 minutes checking it regularly to prevent it from going grainy and it has worked so far for me. - 30 May 2015
