This is an old family recipe for vanilla toffee. Very easy to make and much loved by friends and family for gifts.

55g caster sugar
200g golden syrup
2 dessertspoons vinegar
1 pinch bicarbonate of soda
1 pinch salt
1/2 teaspoon vanilla extract

Line a baking tray with baking parchment.
Melt the margarine in a saucepan and add the sugar, syrup, vinegar, bicarbonate of soda and the salt. Stir over a gentle heat until the sugar has dissolved, then boil until the toffee is at the brittle stage. Test this by placing a drop of the toffee into cold water; if it is ready it will form hard brittle threads that will break when bent.
When at the brittle stage, stir in the vanilla extract then pour into the prepared baking tray to set. Allow to cool before serving.
