Zesty lemon bars


    Zesty lemon bars that always taste great whatever the occasion. A quick and easy refreshing treat! Serve with a little whipped cream.

    Serves: 8 

    • For the base
    • 250g plain flour
    • 150g caster sugar
    • 150g unsalted butter
    • For the topping
    • zest and juice of 1 lemon
    • 200g caster sugar
    • 2 eggs
    • icing sugar, for dusting

    1. Preheat oven to 180 C / Gas 4. Grease a baking tin.
    2. For the base:

    3. Sift the flour and sugar into a bowl. Rub in butter till the mixture resembles breadcrumbs. Press into the prepared baking tin.
    4. Bake for 10 to 15 minutes.
    5. For the topping:

    6. Mix lemon juice and zest, sugar and eggs in a bowl. Stir to combine.
    7. Remove the base from the oven and pour topping mixture on top of it.
    8. Bake for a further 10 to 15 minutes.
    9. Take out of oven and let it cool. Sprinkle with icing sugar. Serve an enjoy.
