Cuban style guava bread pudding

    Convert a stale loaf of bread into a Cuban style guava bread pudding. Serve with vanilla ice cream for a real treat.

    • 1 large loaf of bread, shredded into 2.5cm pieces
    • 235g guava paste, cubed
    • 3 eggs
    • 340g caster sugar
    • 60ml milk

    1. Preheat the oven to 190 C / Gas 5. Lightly grease a Bundt cake tin and sprinkle with a little flour.
    2. Combine all the ingredients in a big bowl and mix together. Stir in the guava paste and transfer to the prepared cake tin.
    3. Bake at 190 C / Gas 5 for 1 hour or until a skewer inserted into the centre comes out clean. Remove from the oven and cool before serving.
