Fresh Coriander Chicken (with thanks to JN)

    Ingredients

    • 8 chicken breasts, skin on
    • Olive oil - 60ml
    • Dijon mustard (non-grainy) - 5 tabs
    • Honey - 4 tabs
    • Worcester Sauce - 2 tabs
    • Garlic - 2 cloves
    • 1 lemon - juice & rind
    • 1 lime - juice & rind
    • Salt & pepper
    • Fresh coriander - 1 bunch + some remaining for decoration.

    Method

    1. Put the chicken into the dish it will be cooked in.
    2. Combine all the other ingredients and pour over chicken. Cover and marinate overnight in the fridge.
    3. Cook in the marinade for 30-30” @ 230oC, uncovered.
    4. Sprinkle over the remaining coriander & serve.
