This delightful French onion soup is made with Cognac for a little extra luxury. Serve as a starter for an elegant dinner party.

850g chopped onions
1 clove garlic, crushed
1 teaspoon brown sugar
1.4L beef stock
150ml dry white wine
salt and pepper, to taste
3 tablespoons Cognac
1 loaf French bread, sliced into rounds
225g Gruyere cheese

Melt the butter in a saucepan and gently fry the onions and garlic for 20 minutes until soft, sprinkle over the sugar and continue to cook until golden brown. Add the stock and white wine and bring to the boil. Reduce the heat, cover and simmer for 1 hour. Season to taste and stir in the Cognac.
Prior to serving, toast the French bread rounds and place them in the base of individual soup bowls. Pour the soup over the bread and when they float to the top of the soup, add the cheese on top. Season and place under a hot grill for 2 minutes until the cheese has browned. Serve with any remaining French bread.
