110g unsalted butter
150g caster sugar
500g double cream

In a small saucepan, melt the butter over a low heat while stirring continuously. Before the butter changes colour, add the sugar and continue to stir over a low heat until it becomes a rich caramel colour. Remove the saucepan from the heat and carefully stir in the double cream until well mixed. Return to a low heat and cook for 5 minutes. Serve warm or cold.
