About this recipe: This lovely springtime elderflower cordial is sweet, refreshing and delicate. Just perfect to see you through a summer of picnics and parties.

Makes: 4 bottles elderflower cordial

  • 25 elderflower heads
  • 1.7L boiling water
  • zest and juice of 4 oranges
  • zest and juice of 1 lemon
  • 1.35kg granulated sugar
  • 55g citric acid

  1. Pick off all of the greenery and insects from the flowers and discard. Place the flowers in a large container and pour the boiling water over, adding the zest and juice of the oranges and lemon. Leave to steep for 24 hours in a cool place.
  2. The next day, strain the mixture into a clean saucepan and bring to the boil, adding the sugar. Remove from the heat and allow to cool to a tepid temperature before stirring in the citric acid.
  3. Using a funnel, transfer into sterilised glass bottled with secure lids.


To drink, dilute the cordial 1:8 with cold sparkling water, or to taste. Once opened, store in the fridge.
