Mexican beef burritos

    The most delicious authentic recipe for this much loved Mexican dish. It's so easy, and looks very impressive when you serve it.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 large Spanish onion, chopped
    • 5 garlic cloves, chopped
    • 600g minced beef
    • 2 OXO® cubes
    • 1 teaspoon chilli powder
    • 1 teaspoon dried red chilli flakes (optional)
    • 1 teaspoon turmeric
    • salt and pepper
    • 1 splash Worcestershire sauce
    • 2 (400g) tins chopped tomatoes
    • 2 (400g) tins red kidney beans, drained
    • To serve
    • soured cream
    • chopped fresh coriander
    • flour tortillas

    1. Heat the oil in a large pan, once heated add chopped onion and garlic, leave to gently fry until golden.
    2. Meanwhile, put the beef into a large mixing bowl. Crumble in the OXO® cubes and add the chilli powder, chilli flakes, turmeric, salt and pepper and splash with Worcester sauce.
    3. Squeeze the beef in your hands, to ensure that all the seasoning is mixed thoroughly. Scrunch it, squeeze it, until it resembles a giant burger.
    4. Once the onion and garlic is golden, add the beef mixture. Use a wooden spatula to break the meat up, cook on a medium heat until it is browned.
    5. Add the tomatoes and over a medium heat, bring to simmer, stirring and breaking any meat clumps with the spatula.
    6. Add the kidney beans, stir in and leave simmering, covered for 20 minutes.
    7. Serve in a deep bowl with tortillas. Put a tablespoon of soured cream in the middle on top of the beef chilli.


    I serve this using a red chilli salsa, soured cream and chopped coriander so it looks like a Mexican flag. It's very tasty, filling and looks amazing.
