225g young sorrel leaves
salt and pepper, to taste
4 hard boiled eggs, sliced

Melt the butter in a saucepan and add the sorrel leaves. Simmer gently for about 5 minutes stirring frequently with a wooden spoon. When the sorrel is soft and broken down press the leaves and butter through a sieve. Season to taste. Spoon the sorrel sauce over the hard boiled eggs and serve.
