Eggs with sorrel sauce

    A simple and tasty dish which is easy to prepare in advance. Also ideal for for cold buffets or garden parties.

    Ingredients
    Serves: 4 

    • 40g butter
    • 225g young sorrel leaves
    • salt and pepper, to taste
    • 4 hard boiled eggs, sliced

    1. Melt the butter in a saucepan and add the sorrel leaves. Simmer gently for about 5 minutes stirring frequently with a wooden spoon. When the sorrel is soft and broken down press the leaves and butter through a sieve. Season to taste. Spoon the sorrel sauce over the hard boiled eggs and serve.
