About this recipe: This is such a fabulous sauce and so versatile and great as an accompaniment to fish, omelettes and even pork chops.


Serves: 8 

  • 2 tablespoons oil
  • 2 large onions, roughly chopped
  • 2 large green peppers, seeded and roughly chopped
  • 5 sticks celery, roughly chopped
  • 2 to 4 tablespoons tomato purée
  • 1 (400g) tin chopped tomatoes
  • salt and pepper, to taste
  • 1 pinch cayenne pepper
  • 1 small red chilli, seeded and minced
  • 1 teaspoon chopped fresh marjoram

  1. Heat the oil in a frying pan and add the onions, green pepper and celery. Cook until soft then add the purée, the contents of the tin of tomatoes, seasoning and chilli. Simmer for 90 minutes. Add the marjoram and stir through. Serve hot.
