Coffee and walnut biscuits

    These coffee and walnut biscuits are a great solution for when you don't have time to make a full blown cake but crave the coffee and nut flavours.

    Serves: 12 

    • 110g softened butter
    • 55g caster sugar
    • 55g finely chopped walnuts
    • 110g plain flour
    • 2 teaspoons instant coffee granules

    1. Preheat the oven to 190 C / Gas 5. Grease a baking tray.
    2. In a bowl, cream together the butter and sugar until light and fluffy. Add the walnuts, flour and coffee granules and mix well to form a dough. Turn out onto a floured board and roll out. Cut into biscuits using a fluted cutter and transfer to the prepared baking tray.
    3. Bake for 15 to 20 minutes until firm and golden brown.

    great recipe, but had to decrease cooking time in my fan assisted oven. only baked for 10 mins otherwise would have burned to a crisp! xx  -  09 Feb 2014
