Family banana bread

    This lovely banana bread is moist and full of flavour. Use bananas that are over ripe, you know, the ones left in the fruit bowl that the kids turn their noses up at. Little do they know that these make the best banana bread.

    Serves: 8 

    • 3 over ripe bananas
    • 55g walnuts, chopped
    • 225g self raising flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon bicarbonate of soda
    • 140g caster sugar
    • 85g butter, at room temperature
    • zest of 1 lemon
    • 2 eggs
    • 55g raisins

    1. Preheat the oven to 180 C / Gas 4. Grease and line a 900g loaf tin with baking parchment.
    2. Mash the bananas in a bowl and combine with the chopped walnuts. Mix the remainder of the ingredients in and beat until well combined. Transfer to the prepared loaf tin.
    3. Bake in the preheated oven for 80 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and enjoy warm from the oven, or allow to cool before tucking in.

    I followed the recipe exactly, however I spread the mixture between 2 loaf tins which almost halved the cooking time so I was able to eat it sooner! I will definitely be using this recipe again.  -  22 Oct 2014
