About this recipe: This incredibly elegant lemon soufflé will be the highlight of your next dinner party. Actually, it's not really a soufflé it just looks like one. This is a heavenly lemon mousse which has been set in a ramekin dish with a collar on it. When the collar is removed it looks as though the mousse has risen out of the dish like a soufflé. So clever!


Serves: 4 

  • 3 gelatine leaves
  • 4 eggs, separated
  • 200g caster sugar
  • zest and juice of 2 lemons

  1. Soak the leaf gelatine in cold water for 6 to 8 minutes.
  2. In a bowl, whisk together the egg yolks and sugar until light and fluffy then add the lemon zest and juice and mix well. Drain the gelatine and squeeze any excess liquid from the leaves and melt in a saucepan over a medium heat with a little water. Whisk into the mixture.
  3. In a separate bowl, whisk the egg whites until stiff then fold into the egg yolk mixture.
  4. Secure a paper collar around 4 small ramekin dishes, so that there is about 2cm extra height to the ramekin dishes then spoon in the mousse to the top of the collar. Leave overnight in the fridge to chill then just before serving, remove the collar and serve.
